Ingredients

  • 2 apples
  • 3 handfuls of favourite berries
  • 1 cup of water
  • 3 tablespoons chia seeds (for jam)
  • 5 tablespoons chia seeds (for pudding)
  • 2 cups plant milk of choice (for pudding)
  • 1 ripe avocado
  • 2 bananas
  • 2 tablespoons cocoa powder
  • 2 tablespoons dates
  • 1 cups plant milk of choice (for chocolate yoghurt)
  • 4 tablespoons Youjuice granola (raw or oat)

The chia pudding and berry jam can both be made the night before and refrigerated - great for meal prep. For the chocolate yoghurt - make sure your bananas are ripe for natural sweetness. The granola topping is best added just before serving to keep it crunchy. Cashew milk gives the creamiest result for the chia pudding, but any plant milk works well.

    Start the berry chia jam: Slice 2 apples and place them in a pot with 1 cup of water. Gently heat over a low-medium flame for 5 minutes until the apples begin to soften.

    Add berries & chia: Add 3 handfuls of favourite berries to the pot and remove from heat. Stir in 3 tablespoons chia seeds (for jam) and mix well. Set aside to cool - the chia seeds will thicken the jam as it cools.

    Make the chia pudding: In a bowl or jug, combine 5 tablespoons chia seeds (for pudding) with 2 cups of plant milk of choice - for pudding (our cashew milk works beautifully here). Whisk together for about 15 minutes until well combined. Set aside to thicken.

    Blend the chocolate yoghurt: Add 1 ripe avocado, 2 bananas, 2 tablespoons cocoa powder, 2 tablespoons dates, and 1 cup plant milk of choice (for chocolate yoghurt) to a blender. Blend on setting 6 (or high) for about 1 minute.

    Check texture & adjust: Open the blender jug and scrape down the sides. If the mixture is too thick, add a little more plant milk and blend for a further minute until smooth and creamy.

    Assemble the pots: Layer up your pots: start with the berry chia jam, the chia pudding, then dollop on the chocolate avocado yoghurt. Finish with a generous handful of Youjuice granola (either raw granola or oat granola).
